Why do I have this reaction? I've been trying to put my finger on it all day.

There are a lot of reasons, but at the core of them has to do with the way that going off plan compounds risk.
I used to do a fair bit of light mountaineering, day stuff, max class 4, minimal gear.

Every time I got in trouble it was when I went off plan, and then took a series of subsequent risks each trying to recover from the last.
You come to a snowfield you're not equipped to cross. Rather than backing off (the smart thing) or crossing anyway (the worst decision), you decide to bypass it by heading up a loose scree slope.
The scree slope turns out to be more treacherous than you expected, but it's better at that point to keep going up than to risk descending. You get to the top of it—but now you're committed. You can't reverse anymore. That wasn't part of the plan.
Then there's a cliff descent ahead of you that you didn't expect to be so challenging to do without gear. You decide to bushwhack through the forest and come around the back side of the peak.
After an hour of pushing through undergrowth, you step out onto an open ledge—and it's not at all where you thought you were going to end up. You can keep pushing for that back side of the peak, but but it'll be dark in two hours and you're many miles from camp.
