Step 1. Chicken and andouille
Step 2. Celery, green pepper and onion, mix the spices
Step 3. Attempt to make a roux.
Step 3.5. Try to be patient.
Step 4. Roux wasn’t as dark as it should be, but vegetables in none the less.
Step 5. Add in the broth, meat, tomatoes, and spices.
Step 6. Simmer for about 90 minutes. Color wasn’t quite dark enough, but pretty good and it smells amazing!
Step 7. Rice. And hot sauce.
Step 8. Serve with beer. Devour.
Bonus: homemade King Cake (out of cinnamon rolls)
