Though Mario is a silent protagonist, he still has emotions and feelings. He may not express it in-game, but a way to see Mario's character is by looking at his actions - seeing what he has to do in the game.
His feelings for Peach are also shown that way. When we are playing Mario, all we are doing is guiding him to his goal, which is the same thing we have to do for a scripted game protagonist who can emote and talk.
The things we must guide Mario through to save her is because he loves her. Even the cutscenes in the games pick up how he truly cares about her.

Mario had to advance over black holes, and risk his life through the gravity of space to save her. It's different from the other times because he was mostly on land.

At the start of the game, when Bowser comes to the Star Festival, Mario tries to make it to Peach. When Mario gets to the bridge, he is tired and out of breath, however, he still tries to get to her. Despite how tired Mario is, he will continue to push himself for her.
In the ending of the game, when Mario and Peach are coming to the bridge connected to the castle, Mario felt a huge shake. Right away, he put his arm in front of her to protect her from what is happening, representing again how he is willing to put his life in danger.
Even while being vacuumed away, he tries to still reach for her to protect her.

In Luigi's Mansion, there is a crying Toad that tells Luigi Peach sent him to look for Luigi. While talking to Luigi, he says - "If he doesn't get back, you have no idea how upset the princess will be! She'll flip!"
We can see how Peach will be upset if something happened to Mario, it will hurt her a lot.
At the start of Super Mario Galaxy, Peach will send a letter to Mario, telling him that she will be waiting for him at the castle on the night of the star festival. She ends the letter telling Mario that there is something she wants to give him.

If you play as Luigi and he carries Peach to the castle, no heart will appear and while they will sit with each other, it's not as close as she was with Mario.

In conclusion, Mario and Peach love each other. Despite it not being noted that they are in a "relationship," both characters show that they deeply love each other.
