First off let’s compare their raw offensive stats
Jokic:

There is a huge gap in playmaking, but Embiid’s scoring is on a GOAT level pace.

Offence still goes to Jokic by a comfortable margin, but the other end of the ball makes the difference.
I don’t even think I need to go in depth on this. Jokic is a clear negative defensively and Embiid is without question a minimum top 5 defender, and in my opinion 2nd overall

Defence is mostly eye test and it’s hard to quantify that as a stat, but we can see how big of a negative Jokic is by looking at his teams On-Off DRTG.

Embiid’s off court sample is also much more stable but his defence being as good as it is compared to Jokics +6.5 makes the overall difference

Jokic has better offensive impact, but since he is such a negative defensively at the most important position on the court that it lowers his overall value.
Embiid’s DPOY level defence along with his historic scoring is what makes him the overall better player
