I have been in a debate of lately that stems back into the original lore and what George says is gospel, even though we know he changes his mind and his actions speaks louder than words. Also his company reflects his ideals and they all worked to create star wars lore as one
continuity (canon) to the movies.
This debate is on whether Luke was married and Jedi can have relationships.
One source I have used is in Revenge of the Sith novelization, yoda recognizes a new jedi order must come about and it would be through Luke Skywalker. It is fact that
Matthew met with George when writing the novel. I have a video up to support this.

"Jedi Knights aren't celibate - the thing that is forbidden is attachments - and possessive relationships." - George Luca, BBC News 2002.

One of the changes the Jedi need to change is
attachment. Luke Skywalker changed that to where one can still have families and not give into attachment. That is spoken of in various novels including Survivor's Quest and Fury. In fact Ben Skywalker explains what attachment is vs. love, marriage and family in the novel when
addressing his dad giving up and wanting to be with his deceased wife Mara Jade.

George understood this change need to happen and set the cource through the lore for the authors to tell (with his approval).
What the Old Jedi Order is in the PT isn't what the New Jedi Order is
to be in Post ROTJ era. We are supposed to see changes and we do.
George approved major story arcs - especially when it is about his movie characters (Luke, Leia and Han for example). What they did in the original EU affects the movies.
Despite the Rinzler quote of George not
liking Mara's appearance (too cosmopolitan), she was approved as a character and wife to Luke. If George did not want them together, it would not happen. Yes, this is another thing anti-EU people throw out.
When you look at story plots for the EU if George didn't approve they
were taken out. For example, Chewie dying in the place of Luke or Anakin Solo dying in the place of Jacen Solo. These were what George wanted and the Author's had to comply.

So when looking back on the original lore - it is what it is because of George and his team of writers.
Luke was married, had a son Ben Skywalker. Just as Leia was married and eventually became a Jedi Knight.

One quote that sums up canon/continuity is George's 2017 Tribeca interview: "Well, the original saga was about the father, the children and the Grandchildren.....its even
in the novels".

If he seen the original eu separate from his movies, why would he relate to novels as continuation of the saga?
Fun Fact: Hand of Thrawn duology came out in 1997-1998.. Before hand Zahn knew several points he wanted to address and one is Luke and Mara's Marriage. 1999 Union came out. The Young Jedi Knights novels, published years before Hand of Thrawn (set after the wedding).
The authors knew of the marriage of Luke and Mara and was a deliberate omission - as they could not make mention of it until after Hand of Thrawn was published.
