I think the reason you see so many people willing to believe the idea of them erasing or retconning the sequel trilogy, (beyond just gullibility) is due to the abundance of other franchises who’ve done so in recent years...
Alien, Predator, Terminator, Halloween ; all of these and more openly dismiss poorly received entries and make these sequel/reboot hybrids that essentially act as a do-over. And while these have worked on occasion, (Halloween); other times this has lead to devastating...
results, most prominently with the Terminator franchise. Terminator Salvation, Genisys, and More recently Dark Fate, were each meant to be the beginning of a new trilogy and each time failed spectacularly; to the point where they’re effectively out of goodwill....

With the Disney era you have almost a full reversal...

It’s this canon system which prevents it from falling where so many movie franchises have before, because it’s not just a movie franchise; it’s a conglomerate of different mediums.
If one were to retcon or erase a trilogy of movies you’re effectively pushing over ...
a series of dominoes, everything that prevents star wars from becoming the terminator franchise would be gone. Star Wars works as well as it does and has the surviving power few others do because it all matters, it all counts, no matter how you feel about it.
