You will need:

-2 TB Lemon juice
-1 TB mustard (dijon is great)
-1 tsp salt
-1 TB water**
-2.5c neutral olive oil or peanut oil
(Don’t use a high end robust olive oil; neutral flavor is ideal, and less costly)

Whisk together first 4 ingredients until combined
While continuing to whisk,
Slowly drizzle oil into the mixture (whisking constantly),
You will see the mixture emulsify and become smooth and creamy.

If the mixture becomes stiff add your water to loosen the texture and resume adding your remaining oil.

Store in fridge
