It's hard to find someone who utilizes shifts and motions more. Simple power read here, and I'll show a couple more plays using the same power read idea in a magnitude of ways.
A subtle pre-snap shift moving Saquon to behind center and running a power read out of wildcat with the QB as the RB. Takes adv of an over aggressive def.
Same pre-snap shift, same power read idea, but this time H-back fake blocks and runs a seam route.
Running an RPO with power read. Creating a wide open middle of the field.
QB power read pop pass. Both slot WR's run corners to open up the middle of the field and once the LB's bite on the power concept, it's wide open.
Again a power read concept. This time a shovel pass. They leave Bosa unblocked and read him. They either have the shovel to the RB, a QB run, or the inside slot guy on a short out route with the two other Field receivers blocking.
Such a good job of using short motions to get the defense to declare if they're in M/Z. Zone read with fake split flow from the H-Back for an easy pitch and catch.

Again using a little orbit return motion to see USC is in man. And then they run a fake screen switch route for an easy TD.
More orbit return at the goal line. I believe Bama ran something similar in the Natl Ship. Just impossible for the DB to make up that much ground.
Fake the zone read and run a freeze option to the outside once the DE commits.
A simple short motion with the WR to set up the crack back block freeing up the H-Back on the split flow off the zone read.
Again, more split zone blocking but this time running an end around with it.
And finally QB pin and pull with a swing screen to the RB built in to the field.
Moorhead pretty much uses 11P on every play (I think, don't know for sure) but like LSU in '19 will give you multiple looks. This allows Saquon to get a 1v1 with a safety and Moorhead is great at scheming the ball into his playmakers hands. A simple mesh concept for a first down.

A lot of people love Joe Brady (myself included).. Joe Moorhead is actually Brady's mentor from their days together at Penn State.
He's probably not on a lot of peoples radar, but his offensive scheme/creativity with UCF's talent is a perfect fit imo
