Nobody follows the dietary guidelines, and they definitely don't eat less animal fat.

But seed oil intake has increased.
Seed oils show a very strong relationship in the epidemiological literature with lower heart disease risk.

Also, in the same period, carbs (from grains) have dramatically declined, while fats (from veg oils) have dramatically increased.
It's a complex story that probably includes smoking too.
