Even if I did believe in the carbohydrate-insulin model, and I don’t, the problem is that fat, or more specifically free fatty acids, also raise insulin acutely. This is the mechanism that keeps runaway lipolysis from happening in all fasting animals (the way it does in T1DM). 😑
Really just underscores the fact that insulin is the CART and not the HORSE. Insulin is simply responding to fuels in the bloodstream, trying to clear the bloodstream of excess fuels, maintaining homeostatic levels opposite of glucagon. Glucagon raises fuels, insulin lowers.
Getting thinner or fatter comes down to SATIETY PER CALORIE.…everyone eats to satiety, and weight gain or loss depends on how many calories accompanied that satiety. Protein and fiber improve satiety per calorie, and refinement of carbs and fats, especially together, worsen it.
