Why Itadori Yuji is one of the best new gen protagonists

Yuji's goal is very unique compared to other mc's.
He breaks out of the normal shonen trope of the protagonist having a straight forward goal at the beginning of the series.

In most shonen, the mc's main goal is either wanting to reach the highest status of their dreams (#1 hero, Hokage, Wizard King, Pirate King, etc), avenging a loved one, or protecting their friends and family.
Itadori differs from these mc's because his goal of wanting everyone to have a proper death isn't as straight forward.
He still DOESN'T know what a proper death is. This resonates with the reader/watcher because it sparks people to think what a proper death is themselves.

His Growth
Itadori at the beginning of the series was a care free, laid back highschooler. Who messed around with friends. He had no clue how cruel the world of curses really is.

His Grandfather in his death bed gives Itadori the ideals that he has now. He tells Itadori to help people so he doesn't end up like him, (alone in his final moments.) This starts Itadori's search for what a proper death is.
When confronted by a cursed spirit and a chance to save someone Itadori is afraid and unable to move. He questions how his Grandfathers death and the death he faces now are any different.
He comes to the conclusion that his Grandfathers death was a proper one, he risks his life saving Sasaki and helps Megumi fight the cursed spirit.
When the Jujutsu Tech principal asks Itadori what his purpose in being a Jujutsu sorcerer is, his answer is refused,

Itadori has to make his Grandfather's wishes HIS OWN so he doesn't end up cursing him after death and has no regrets when he eventually dies.

In one of my favorite moments in the series Yuji states that consuming Sukuna is something only he can do.

And now we fast forward to the curse womb arc, where we see the first crack in Itadori's ideology.
On the verge of death he regrets eating Sukuna's finger. He is afraid of dying because he doesn't know if it would be a proper death.

This scene is a case of extremely good writing.

Itadori swallows down his anger, fear, and regret and uses it as energy to fight for his life, because he wants to decide where and when he dies and to find a proper death for himself.
The Mahito arc a lot of character development for Itadori
In Itadori and Junepi's conversation We are shown that Itadori doesn't like the idea of killing because he feels that the choice of killing will follow him around and that he will question the value of his friend's lives

The death of Junepi at the hands of Mahito pushes Itadori into a darkness that he has never felt in his whole life.
His philosophy of not considering killing is gone. Itadori is left with only the rage and hatred he feels towards Mahito.

Mahito was born from the hatred humans hold towards each other, he's a curse who has a Nihilistic point of view, he believes that life is meaningless and has no value. So he is able to kill people without a second thought
Itadori is a human that believes that life is precious, and that everyone deserves to die a proper death. Because of these ideals he saves people without a second thought.
