How to Smoke a Brisket - a live thread

*This is my third brisket. I am certainly not an expert and I am very open to feedback.*

1) Choose your Brisket.

This cut is 7kg or ~ 15 lbs. This is on the bigger end. I found this one @saveonfoods on sale for ~$54.
2)Brine the Brisket

I brined the brisket in a brown sugar/kosher salt combination for about 20 hrs in the fridge. Next time I need a bigger container. I salted the exposed meat, and flipped the meat at 10 hrs.
3) Remove from brine and dry. Add spices.

I am using @SilkRoadSpices “St.Laurent Steak Spice”
4)Put the brisket in the smoker @ 250F for a few hours:

I have a Davy Crockett Green Mountain smoker. It’s small, but half the price of a standard smoker.
