Minecraft makes me a little angry because of how underwhelming its amount of content is compared to its potential. (I know mods exist).

minecraft is an incredibly powerful engine on which you can build adventure maps if you so choose

But the adventure/RPG angle is one they really need to expand native support for.
There are hardly any structures in the main world. There's no way to turn up the frequency of em
it's great if you're a creative sandboxer who can turn nothing into something. But if you're not very creative, the world is way, way too empty.
Imagine: Crumbling ruins of cities and castles, sites of where nether fortresses breach into the overworld, pillager encampments.

Not something a adventure map maker has to design- but generated, same way a village is
There's currently "hidden treasure" boxes that villagers will sell you maps to.
They're literally just chests buried in the ground. They'll also sell maps to woodland manors (extremely rare) and water temples (not rare, don't have jack shit in them)
Imagine if villagers could generate quests like side quests in any other game- retrieving specific & unique items- going through a villager or two to get the maps necessary to find it!
Enchantments are good for powering you up but aside from Frost Walker (which makes water freeze underneath your feet) and Infinity for bows (infinite arrows- not any special arrows, only plain ones)- there's no magic in the game that introduces a new mechanic
...mechanic that's not available via potions or tipped arrows. Nothing that uniquely changes the way in which you can interact with the world. There's a million things you could do there.

For one- expand Infinity. Let Infinity II be a rarer one that lets you use tipped arrows
There's no enchantments that, say, turn mobs hostile against other mobs and not you. Easy mechanic right there
There's no way to turn item durability off if you dislike the mechanic. Easy change.
There's no enchantment, for say, instant tree felling. There's no enchantment for explosive arrows. there's no enchantment for shields to reflect arrows
There's no way to do anything but glide with an Elytra unless you obtain fireworks- costly, no hidden mechanic that lets you do it any other way. No enchantment that makes you just fly without some weird quirk
There is no connection between villages. Roads go maybe 20 blocks beyond the village center and there is zero interaction between even close villages.
The bell that's supposed to get villagers to go inside doesn't work for shit
There's no climbing mechanic. Only hop 1 block. Hop hop hop. Forever. Not like other games where climbing could get you out of bounds. There's no out of bounds. Let me climb.
MOB AI.

There is literally nothing to Mob AI besides "attack you". There is no technique to beating any mob. Zombies do not horde, creepers do not creep

Spiders do not do anything but slide up walls. Their model doesn't even rotate. They just slide. They don't even produce web
There is no rhyme or reason to mob spawning- all mobs just spawn everywhere that it's dark. There's no hostile biome-specific mobs besides one zombie retexture.
Why the fuck aren't creepers camoflauged? You would think there would be literally anything to them other than "they're slightly quiet and explode"
Biome-specific mobs are better when it comes to passive mobs. Parrots, llamas, dolphins, tropical fish etc are all good examples. But it makes the biomes with nothing unique stand out like a sore thumb. Notably- Savannah biome. No horse retexture to zebras, no lions, no rhino...
...no elephant, nothing. Just a different kind of tree and grass color
Don't get me started on their utter refusal to add basic, critical variants of blocks- sideways stairs, vertical slabs, total inconsistency on which blocks get these and walls

Almost no decoration blocks for houses. No fucking chairs. Let us sit in stairs natively, cmon
Instead we get things like Quartz variants whose textures are literally indistinguishable from one another
There is about one multi-step production line in the game. Sure there's complicated farms and machines you can make, but there's no item besides cobblestone that you have to specifically pass through a machine more than once
There's no avenues for renewable resources for someone who doesn't enjoy exploring really far/tearing up the entire world near their builds. (This is partially solvable with datapacks, which I have done in making renewable diamonds & iron).
Natural features- there's no waterfalls, they just place one block of water and let it go down a hill in a really ugly way. The badlands biome has no Butte or Mesa features- just plateaus that are all the same height
