I believe that those same anti nutrients are also decreased in the body when we consume those same fermented foods

This is why it can be smart to go on an ancestral or carnivore diet (no or little ingestion of anti nutrients) while consuming fermented foods.
The beneficial bacteria from fermented foods go to war with the bad pathogenic bacteria to restore gut balance

This is also why those on a carnivore diet without fermented food usually have bad reactions when they try to reintroduce plant foods
Without the consumption of fermented foods the pathogenic bacteria will simply go dormant only to reawaken with newly consumed plants foods

The idea is to not feed pathogenic bacteria by starving them from sugar and too much fiber and to have these pathogens be killed off by the beneficial bacteria naturally in ferments.
Afterwards, when the gut lining has healed and the microbiome has properly rebalanced, then an individual can have other plant foods without too much of a reaction.

Unfortunately, this process can be frustratingly slow. The gut takes a long time to heal just like how broken bones do. Patience and correct nutrition is key in gut healing protocol
