Sean Payton runs the New Orleans offense. Dennis Allen has done a great job with the defense. And Dennis Allen can't get a sniff for a second head coaching job. The Saints end up with stability and consistency.
One last point: In 2015, the Falcons hired Dan Quinn, who hired Kyle Shanahan. Shanahan left after two years, and the offense fell apart. If the Falcons had just hired Shanahan in the first place, he'd still be the team's head coach.
One more last point: Sean Payton has been in position to coach Drew Brees every year since 2006 (with the exception of 2012). Kirk Cousins has had three offensive coordinators in three seasons, and he's likely to have a fourth in 2021.
