I think we were all surprised the first time Levi came out of nowhere to save Eren. Especially since this moment isn’t present in the manga. So why added this scene ?
So I searched on the internet and found this article :

This may be true, but by rereading the manga and rewatching the anime, we can find another explanation: it fits more with Levi's character and the various events.
So here’s a reminder of the important events of the MANGA and the ANIME.

> Levi's words about Eren. He indicates that he takes responsibility for Eren, and that if he goes berserk or betrays them, he will kill him immediately. That only he can do it.

(ch18, ep13, season 1)
> As the story progresses, Levi loses his entire squad because of the Female Titan, which previously escaped the Survey Corps. We know Levi is attached to his comrades. He's the soldier who cares the most about others.

(ch27to30, ep20to22, season 1)
Also, note that in the anime, Levi says this :

The future of Eren and the Survey Corps depends on the capture of the Female Titan.
> Next, Eren, who is the only survivor of the Squad Levi, is captured by the female Titan. Levi and Mikasa chase after her. It's the first time they've teamed up, because Levi chose to believe Mikasa and her determination; Eren is still alive. The hope is still there.
Mikasa also blames Levi for not protecting Eren properly. There, we see a moment of silence/reflection in Levi. Ok, he's trying to remember where he's seen Mikasa before, but you can also think he feels touched by her words. Because in the end, she is not wrong.
(ch30, ep22, season 1)
> Finally, we will advance further in the story, after Annie's capture, a new arc begins. In it, Levi's role will be almost erased because of his injury. He can't go to the field, and has for mission to watch Pastor Nick.
However, Levi will order Mikasa to protect Eren by all means. At that moment, he'll entrust her with the responsibility of Eren, cause Levi noticed her dedication towards him.

(chap 37, ep28(3), season 2)
Note that the last two lines Levi tells Mikasa in the manga are now for Eren, and it's better that way.
Now back to the manga, at the moment that interests us.
In this one, Levi is injured and isn’t wearing his uniform. He's set back, silent, looks up, has a worried face and he clenches his fists. Looks like he feels helpless and yet, we won't see him again until Annie is captured.
Now let's go to the anime version, where some changes were made as the story developed...
In episode 24, we see Erwin put on his 3D maneuver gear while Levi, in his black suit, is the only one to stay still. Once again we emphasize his helplessness. A shot shows the equipment, followed by a shot of Levi. Levi's going to put on his gear.
In episode 25, Erwin is arrested for treason. Then he indicates that they must capture the Female Titan for humanity. The images below show you the important lines of this moment.

Note that Levi will disobey Erwin.
Annie's crystallization process is also altered, as she merges with Eren's titan, Eren who has gone berserk. Mikasa rushes to save him but Levi arrives first and saves him. (Ok, Levi is injured but he doesn't fight, he only extracts Eren from his Titan). Mission accomplished.
So Levi's intervention isn't just fanservice, there are reasons :

- He saves the future of the Survey Corps, and avenges his fallen comrades by securing the capture of the Female Titan.
- He saves Eren, and respects his commitment to him.
- He saves Erwin (anime only ?).
- Mikasa won't be able to blame him a second time.
- When he'll give to Mikasa the responsibility of Eren in the next arc, it will make more sense.
In conclusion, even if the version of the manga is nice, the one proposed by the anime is interesting because it emphasizes more the fact that Levi is caring, attentive and that he keeps his word.

Levi is best boy.
