I recently watched #TenInchHero's commentary featuring (director/producer) David Mackay and (producer) Mark Witsken.

Here's a thread of some notable tidbits (with a heavy focus on Jensen and Danneel:

Beach City Grill was a “cafe” in San Pedro, CA. (It’s now permanently closed, according to Google. =[ ) They kept the original name because the movie didn’t have the finances to change the signage.
Improv Alert:

Priestly’s entrance dance.

Its inclusion “paints a nice picture of what Priestly is like. Maybe a little edgy/scary on the outside, but deep down, he’s got a heart of gold. A…warm...loopy, goofy, observant, irreverent guy.”
Jensen was “willing to come in and just go for it.” They “saved his closeups oftentimes for the very end because by the end of it all, he would come up with these great ideas,” and they wanted those moments included in his coverage.
Jensen and Danneel were friends “long before” the movie ever went into production, but TPTB didn’t know that. It was “a coincidence that [Jensen and Danneel] ended up in the same movie, having wanted to work together.”
Betsy Morris’ screenplay expressed “very carefully and meticulously” that Priestly had different t-shirts and hairdos every day. They like that the shirts are not explicitly mentioned in the movie, that the shirts just *are*.
The gentleman Jen offers a meal to in exchange for a rock was actually a local man experiencing homelessness. They offered him a “pretty good salary for a couple hours’ work,” and he left with a bonus because he was “so giving and willing” and “did such a great job.”
Improv Alert:

Tish pulling her hair back as she offered to show Trucker how she “earned her crown.”
Improv Alert:

Priestly’s “Shit!” and moment of panic while burning something on the stove.
They wanted Priestly’s car to be a purple Gremlin, but couldn’t get the one they found to start. They don’t remember how they ended up with “that red piece of shit, but it worked perfectly for his character.”
The character of Priestly was to be more suited to Seth Green or Justin Long, but they liked Jensen so much, they “cast against type.”
Improv Alert:

Priestly’s eyelash batting at Tad.
Danneel is “a great actress, beautiful, and funny.” She’s “so enthusiastic” on set. The “energy center of the whole cast.”
They were worried about budget, especially in costumes, but they heard Jensen “found a kilt in a thrift store he [wanted] to wear, and it [cost], like, $75.” The kilt was given the green light after a quick laugh from TPTB.
Improv Alert:

The “I’ll drive/I’ll buy the beer/I never get to do anything fun” reasoning was made up on the day between Jensen and David.
The tampon scene was filmed on the last day of shooting. Jensen had already shaved (the day before) for the beach scene, so his facial hair was all fake for the tampon scene.
Improv Alert:

“A couple of the more lewd” lines during Priestly’s speech while checking out at the store came from Jensen when he was told by David to “forget about what’s on the page” and “just let loose.”
Improv Alert:

Tish’s response about it being “more in the fingers” to Jen’s concern about carpal tunnel.
Priestly having scenes alone with one of the girls was a chance to show “how much heart he has when it comes to understanding and appreciating other people and their circumstances.”
Priestly’s “No One Knows I’m a Lesbian” shirt was sold online in the name of charity.
Improv Alert:

Priestly (intentionally) falling over on the counter when talking about rollerblading.
Jensen’s hair color/style sometimes had to be changed two or three times in a single shooting day.
The shot of Tish sticking the order ticket in Priestly’s mohawk took 16 or 17 takes due to the “dry/sticky” texture of his hair. They tried gum and glue to try and get it to stay.

Some of Priestly’s nickname conversation with Fuzzy 22.
Improv Alert:

Piper’s praise to Priestly after Jen and Fuzzy leave.
The Boaz reveal was considered a “bold step” for a character. But they also don’t believe he’s the type of guy who will sport Banana Republic attire often. He was referred to as a “shock jock” who used the “opportunity to get Tish’s attention.”
They “don’t think it’s any secret that Jensen and Danneel became boyfriend and girlfriend after this movie wrapped.” TPTB were excited about that happening.
