THE FULL SENATE MAY ATTEND TO OTHER BUSINESS WHILE THE TRIAL PROCEEDS.
Yes, you can impeach an official who is no longer in office. In 1876, the House impeached former Secretary of War William Belknap, despite his resignation.

The Senate specifically debated whether Belknap’s resignation mooted his impeachment, and decided by vote that it did not.
Can the new Senate decide otherwise? Yes it can. A majority vote could set a new and different precedent. Likewise, the Senate could vote to conduct the trial of a former president on the Senate floor if it wants to. But I don’t know why they’d want to at this point.
