In the first episode, it was made clear that Teh doesn't like coconuts. He even tried to refuse Hoon's offer to drink the coconut water in order to gain luck before the announcement of qualified applicants in Anantasart. He still ended up drinking it and expressed his disgust

Jumping to episode two, Teh discovered that Oh Aew uses coconut-scented pens and once again indicated his hate for the smell of coconuts 
However, as the story progressed in the second episode, the last scene showed that Teh has started to like the smell of coconuts when he got the opportunity to smell Oh Aew's head with its scent 
Episode three opened with Teh admiring the coconut meat by smelling and eating it to avoid getting caught by his brother. Hoon asked if it doesn't stink for Teh anymore and he said it was delicious 
On the other hand, Oh Aew also noticed Teh's sudden change of perception towards coconuts. He took another handful of coconut scented shampoo and applied it to his hair, imagining what he just experienced with Teh earlier 
Further in the episode, it appeared that Oh Aew had fallen for Teh after what happened at the pier and was conflicted who to choose between him and Bas (the one he liked first). He chose to keep this feeling secret 
Finally, they admitted to having feelings for each other. But, they were not sure how and when it started 
For me, their feelings for each other started developing when Teh and Oh Aew hung out more in the second episode. As indicated, they started from being rivals to being intimate

Teh was offered another drink of coconut water before his entrance exam in episode five. He claimed to dislike coconuts once again and attempted to refuse yet another sip of the coconut juice. But he still failed to do so 
Mid-episode, Teh was running with Oh Aew to the tip of Promthep Cape to fulfill his promise in episode three. It was shown that he started drinking coconut juice again 
Teh finally realized that it was LOVE 
All in all, I believe the coconut resembles what Teh feels towards Oh Aew. In the beginning, he hated the scent of coconuts. This hatred happened when they were still not reconciled. They became friends again and Teh knew that Oh Aew's signature scent was of the coconut's.
When he got to smell Oh Aew's head with the shampoo, he realized that he likes the smell of coconut. I think Teh acted this way because his feelings for Oh Aew had changed into something more than a friend. Even though he hated the coconut's scent, he started to like it—
—as he falls for Oh Aew. And when these feelings shifted in a bad way on the fourth episode, Teh started to express his dislike for coconuts once again on the episode after. But in the end, his love for Oh Aew still prevailed as they drank coconut juice together.
We can also view the coconut as Oh Aew. Teh always tried to refuse taking a sip, but failed all the way. His feelings for Oh Aew is the same, no matter how much he refuses Oh Aew and his love for him, Teh still cannot deny him and ends up giving in to LOVE
