i'm translating an interview on how to properly eat a xlb, according to a shanghainese xlb chef.

when it comes out of the steamer, it's 90 F. the perfect temp to eat it is when it settles at 85 F. to do this, u have to get it to the customer's table within half a min.
also you're supposed to eat the XLB in two bites. dipped in vinegar -- not soy sauce.

and NEVER, EVER dip it in vinegar first.
