A quick analysis of Jeankasa:

It all starts here. Before Jean ever even met Mikasa, it is shown here that Jean is physically attracted to women who have similar attributes to Mikasa proven by his drawing of his dream girl.
Here again Jean is mesmerized but Mikasa's looks blushing as he compliments her long black hair. Later he sees Mikasa associating with Eren which starts the jealousy that goes on between them.
i think slowly over time Jean's physical attraction to Mikasa becomes more into an emotional connection as they got to know each other more. As proven by Jean will fight and put his life to risk for Mikasa when she is in danger.
Now Jean's feelings are one sided. Mikasa never saw Jean the way he sees her. I think he understood it when Mikasa held Eren's hand in this scene. Jean understood that since he loves Mikasa he has to let her go.
That does not mean that Mikasa does not care for Jean tho but its much more platonic than how Jean cares for Mikasa.
Jean honestly finds Mikasa as one of the most admirable ppl and he cannot stand it when ppl take her for granted. Which he gets out by always picking fights with Eren
After time skip it is still proven that Jean's dream is having a family with Mikasa. Even after all these years of understanding that Mikasa will never love him, Jean can't stop loving Mikasa. To put it in perspective Jean loved Mikasa for almost as long as Mikasa loved Eren.
Since Jean is a straightforward pessimistic character, he really must have lost all hope of love. To make matters worse Sasha his bff died, Connie is getting distant from him, and he has no clue if Eren is going to betray them. By now Jean understands he will never have anyone.
However this is the part of Jean that i love the most. Even if he realises that no one will be there to love him at the end, he still gives out selfless love to Mikasa. He cares for Mikasa deeply and loves her unconditionally even if he does not receive it back per say.
Jean believes Mikasa deserves care and love. He is so selfless he allows Eren to take care of Mikasa because that is what Mikasa would want. Mikasa will always be Jean's love even if nothing will come from it.
