It's something that has bothered me since that week. He never said he resigned. I don't think Trump ever used the word either. Only the media and democrats (redundant, I know) did.
He was careful not to speak in past tense, but write in a way that gave that illusion. This isn't a resignation letter, it's a letter of record.
"He's going to be leaving on Christmas ever to spend some time with his family."

That's how President Trump characterized his absence.

That's echoed in his letter, second page. (yes I know the letter says Dec 23, but you know how Trump is directionally-true)
"As discussed, I will spend the next week wrapping up a few remaining matters to the administration and depart on December 23rd."

Barr is careful with his words. He's being literal and factual. He had to leave town for a little bit. He had to depart.
This is like me when I email my boss for a business trip.

"I depart on Tuesday."
