Well, it's dinner time (in the UK, at least) on the first day of #Veganuary. Maybe it's been a breeze so far. Maybe you're staring at your beans on unbuttered toast, wondering how on earth you'll get through the next 30 days.
I'll let you in on a secret.
I'll let you in on a secret.
When I first went vegan 4.5 years ago, I didn't find it easy. I'd been a vegetarian for a long time, and BOY did I have a dairy addiction. I also couldn't cook to save my life. I had to learn, quick. Luckily, such marvellous things as recipe blogs abound. I'll share my faves.
Jeeca's blog, The Foodie Takes Flight, features a wealth of recipes that I find a) easy to prepare and b) absolutely delicious. From noodles and pasta to fabulous ways to make tofu, it's all #vegan and it's all here - https://thefoodietakesflight.com
@eatingveganwme has an awesome website that includes recipes for all your favourite meals, guaranteed. Got a celebration coming up? Jalisha also offers amazing recipes for cakes, cookies and more, right here - https://www.eatingveganwithme.com
Attempting #Veganuary on a budget? Check out @BootstrapCook 's brilliant website. All recipes are fully costed, right down to the most inexpensive cooking methods, and are very accessible to cooks of all standards. (I love the white bean cassoulet!) https://cookingonabootstrap.com
@meerasodha writes a great column for the @guardian, the New Vegan, which features inventive, delicious and almost always WFPB recipes. Try the Iraqi bean stew or the tomato, coconut and lemongrass noodles. https://www.theguardian.com/food/series/the-new-vegan
The lads at @BOSHTV come up with great recipes for everyday familiar favourites that will appeal to all. Cooking for fussy kids or a sceptical partner? Try out a Bosh recipe. https://www.bosh.tv/recipes/main-dishes
Like I said, these are just my favourites, but if nothing appeals then - and forgive me if this sounds patronising - Google really is your friend! Just chuck in the ingredients you have or the food you're craving, as well as the word vegan, and away you go.
I'll be sharing handy cooking tips, recipes, information about animal agriculture (nothing graphic), studies and papers on the positive impact of plant based diets on health and the environment each day to the end of the month. My DMs are also always open for help and advice.
Remember - this is day one of what could become a permanent lifestyle, so be kind to yourself. But also be brave, be inventive, and be committed. Nothing worth doing is a doddle to begin with!
Good luck all on your #Veganuary journey
