1. Kakori is the king of kebabs, and Al-Kauser is the king of Kakoris. Started by Sadia Dehlvi and her mom is the 1960s, they serve the perfectly flavored, melt-in-your-mouth Kakori kebab. My favorite thing to eat. Made with 52 spices, as per the claim.
2. There is also another kind of kakori kebab you get in Delhi: red, hotter, firmer. For this, head to Qureshi Kebab in Khan Market. This used to be perfect at Al-Javed, but they closed down, and I found their kebabchi at Qureshi.
3. Galauti kebab. There are many good ones in Delhi. Al-Kuresh in Yashwant Place, and Rajinder da Dhaba in Safdarjung serve very different varieties. Al-Rashida in Zakir Nagar is also really good.
4. The Delhi Seekh. A plethora of places in old Delhi serve great versions of this. My go-to is Karim's at Matia Mahal. Call it overrated for gravies, but their Kebabs are truly the best.
