Been reading fascinating research articles on bud dormancy of woody perennial fruit trees (e.g. grapes, peaches...).

... to short-day light conditions (photoperiod) & low temperatures, buds undergo bud dormancy (ceasation of visible growth) & dehydration (to allow for supercooling), in preparation for low temperature experience.

At the end of winter/start of spring, reproductive buds break...
... dormancy either through chilling requirements or plant hormone balances (abscisic acid vs cytokinin & gibberellin) & start flowering to give the fruit.

With climate change predictions indicating severe changes in temperatures & rainfall pattern , its time plant breeders...

Lack of sufficient chilling requirements is common problem in tropical/sub-tropical regions.
