The only Fried kibbeh (كبة مقلية) thread!

- Fried kibbeh is my favorite Arabic food.

- Syrians make the best fried kibbeh. Don't @ me. I will die on this hill.

- This is my fried kibbeh - My recipe will be later in the thread. Be patient. It will have been worth it.
- Sitti (my grandmother) made the absolute best fried kibbeh. Everyone always requested it at every family dinner and event.

- Sitti wrote a lot of recipes down before she passed, but we can't find one for kibbeh

- This is Sitti and me in 2008.
- Proper forming of kibbeh is not easy.

- My Mom made a lot of great Arabic dishes, but was never able to get kibbeh (or falafel) forming right. She usually ended up baking it and we'd have to wait to get some from Sitti.

- This is my Mom in 2010, just before she passed.
- Fried kibbeh is available in most Arabic restaurants.

- I've never had good fried kibbeh in any restaurant in the US. Not once. I've tried more than I can count.

- I needed to make my own but I knew that I had to get something at least close to Sitti's kibbeh.
- So, there are 155,000 recipes on the Internet for fried kibbeh (I counted). Each one differs in both spices and technique.

- I also managed to find some old recipes in my mom's cookbooks and some community ones from when I was a kid.
- I knew they'd be somewhat close, but not close enough, so I read more and more similar recipes, trying to find related ones.

- I bothered cousins and aunts and friends and got a few more to consider.
- I took all of the recipes and came up with this hybrid - And do you know what?

- I think Sitti would be proud.

- The shape/size is definitely not perfect; that will take some time to improve, but the taste is just as I remember it from the last time I had her kibbeh in 1998

Postscript: Yes, kibbeh is spelled four different ways in these recipes. Arabs, man.

Post-postscript: I miss my mom and Sitti terribly.
