For Xmas, I made a meal for all the Gamers out there. Gamer Ramen. Doritos Noodles, Baja Blast tori shio broth, Mountain Dew marinated egg, Mountain Dew braised pork, and Mountain Dew pickled daikon. All made from scratch, and it was pretty delicious. #gamers #ramen #bajablast
Noodles were made with cheese powder, cumin, onion powder. Made a dashi by soaking kombu in Baja Blast overnight. I call it "mountain dewshi."
Shio Tare was Ivan Orkin's shio sofrito tare mixed with the dewshi. Added it to a chintan broth made with chicken, apples, ginger, and onion.
For the eggs, I mixed flat mountain dew with sake to replace mirin and made a 6% weight/volume brine and soaked them for a day.
This was actually a pretty good bowl of ramen. I don't make a lot of chintans so it was really nice to try something light. I played into the fruit flavors of the Baja Blast and it worked really well with the apple sofrito. Aroma oil also had some yuzu in it to ramp up the citrus
A problem I encountered was a muddy broth that messed with the color, so I had to clarify it with an egg white raft like a consommé. The broth also diluted the beautiful Baja Blast color so I had to reinforce the teal by steeping butterfly pea in the chintan.
I took pictures of the notes I took while I was working on this. Most of these are meant for me to track what I was doing and probably isn’t useful to mose people but I wanted to share at least some of my thought process working through this.
