On day 1 a chef pulled me aside and told me to chop the flour - gave me a chef’s knife and a pile of flour and said I had to chop it up extra fine. He’d come past every few minutes, “taste” it, and be like “nope, still not fine enough”. I chopped that flour for like an 90 minutes
Another time, in the middle of dinner service when everyone was frantic, a chef grabbed me and said he urgently needed me to find him a left handed knife, right fucking now. I kept bringing him knives and having him call me a fucking idiot because it’s a right handed one
But the highlight was when a chef said he’d train me to cold steam the vegetables. We had a huge pot of boiling water, and a big plastic bucket with a snap on lid. I had to hold the bucket over the water, fill it with steam, put the lid on, and run it to the walk in fridge…
Then I had to wait ten mins for the steam to cool, then take a handful of vegetables, quickly open the lid, throw them in and snap it shut - the secret was to do it super fast, otherwise the cold steam would escape.
Every time I’d do it, then ten mins later the vegetables are still raw, and the chefs were like, try it again, you’re just doing it too slow. I spent an entire afternoon trying to cold steam the vegetables.
