Beans and rice remains one of the most popular dishes in Latin America and the Caribbean.

The common bean 'Phaseolus' cultivated by Indigenous people, originated in Mesoamerica, and subsequently spread southward, along with maize and squash, traditional companion crops.
Asian rice was introduced to Latin America by the Spanish & Portuguese, but Indigenous peoples of the Amazon had already cultivated a distant relative of Asian rice some 4,000 years ago.

Africans also played an active and major role in the establishment of rice in the Americas.
There are many types of national dishes, such as:

the Colombian Bandeja Paisa,
the Puerto Rican Arroz junto,
the Nicaraguan/Costa Rican Gallo pinto,
the Jamaican Rice and peas,
the Cuban Moros y Cristianos
the Dominican Moro de guandules,
the Brazilian Feijoada,
and many more
