Got a new pellet grill for xmas. Just started #sousvide on some top sirloin steak, and want to sear it on the new grill because I know to to #sousvide steak, rusty with grilling.

Any tips on time for a good sear but not overcook?

Lots of great tips from folks. Current plan:

Pull steaks out of #sousvide, cool them down, dry them off, rub w/olive oil & a spice rub (I love my #OaklandDust, as does the family), then drop them for 1 min/side on the cast iron that’s been on grill for awhile.
