2 c fine ground cornmeal
1/2 c flour
1 Tbsp baking powder
1 tsp kosher salt

Set your oven to 450, put the oil in the pan and heat it up while you’re waiting for the oven temp to rise.

Do the normal bread steps now — dry ingredients together, wet ingredients whisked together, then everything combined. Take that hot oil out and start mixing into the batter. The salt of your tears helps with binding, probably.
Now pour that back into the very, very hot skillet. It probably smells great already. You’re doing so good. Text your momma.
