I do a parent & kiddy class each summer that teaches families how to cook veggies. 100% of the kids eat the veggies. The parents are often surprised! While I am sure some kids won't eat them for other reasons, it is my belief that people are just very bad at cooking vegetables.
Folks try to feed children boiled vegetables a lot. Boiled vegetables are disgusting. You want a child's first intro to veggies to be positive. Roast, grill, sear and stir-fry your veggies.
Leafy greens like kale, spinach, mustards? Stir-fry with olive oil, garlic, shallot or onion, & seasonings. Broccoli, cauliflower, Brussels sprouts? Blanch, ice bath, then roast or pan sear in olive oil, kosher salt, onion powder, marjoram.
Asparagus, bell peppers, corn, carrots? Roast at high heat until browned. Forced to use canned or frozen veggies for financial reasons? Take the juice or grease from the meat you're cooking with, coat those canned veggies and pan-sear or roast.
Cherry tomatoes? Brown them with spinach. Garlic, onion, shallot, leek, and ginger are your vegetables best friends. Thyme, rosemary, oregano, basil, and marjoram are flavor superheros. Remember, flavor is key.
Don't give children beets, though, for any reason. Children don't deserve that. đź’€
