The USDA removed the table showing the Oxygen Radical Absorbance Capacity (ORAC) of Selected Foods Release 2 (2010) table due to the lack of evidence that the antioxidant level present in a food translated into a related antioxidant effect in the body.
Oxygen radical absorbance capacity assay (ORAC) is a method that was first developed by Cao, Sofic, and Prior (Cao et al.,1993,1996) and relies on assessing the effect of presumed antioxidants by measuring fluorescence quenching.
Quenching refers to any process which decreases the fluorescence intensity of a given substance. A variety of processes can result in quenching, such as excited state reactions, energy transfer, complex-formation and collisional quenching.
