(Loki's switch from merely a god a mischief to a god of evil was to fit into Christian ideals of Satan; Ragnarok was reframed as a deliberate purging of the old gods for the new one, and the ending in which one man and one woman survive is believed to be wholly tacked on.)
The 'death of old gods' myths were widely distorted by Christians among other cultures as well, taking what may have been meant as fertility and season changing myths and turning them into ways to warp cultures toward Christianity.
This is why some Catholic saints were probably old gods, by the way!
This practice can be framed as deliberately destruction of culture and in many cases it was (especially in the Americas), but in other cases it was likely a response to a rapidly changing world. (Other religions have done this too)
Snorri was likely not trying to wipe out the Norse gods, but preserve their myth in a way his current audience could understand and relate to, but it is important to keep in mind how widespread Christian ideas are in places we wouldn't think they would be.
