You can clearly see that Australia has been graveyard for away spinners.. Whatever little success they achieved, it's either for wrist spinners or left arm orthodox ones..
Some missing names in above list:

Muralitharan 12 wkts in 5 matches @ 75.41
Harbhajan 9 wkts in 4 @ 73.22
Ashwin 27 wkts in 7 @ 48.1
& If I add Moeen Ali- 5 wkts in 5 @ 115

While Ashwin did okay if you compare him with his contemporaries. But off spin just didn't work in Aus.
If anyone among off-spinners relied more on over-spin (like Lyon does), it was Harbhajan. Even his record tells you he was far from cracking code of Aus pitches.

& don't even check d/n Test records:
Away spinners picked 2 wkts in an inng ONLY THRICE in 7 matches. Forget 3,4,5...
Having said all this- I watched bit of 1st practice game. Kuldeep looking like shadow of himself (comparing 2018 tour). Ofc constantly losing place in XI everywhere shattered his confidence.
On other side Ashwin looked improved version of himself with experience of 3 tours.
So which option would you prefer?
1) Safer one- Ashwin (will hold one end at least)
2) Bit of gamble- Kuldeep (might turn out another Karn Sharma or have a potential to be Mushtaq Ahmed)
3) All pace attack (going with pink ball tests records)
