Shop A: Sells wall art, wedding invites, and socks
Shop B: Sells boho wall art, nursery wall art, motivational wall art

Rather than Shop A who is selling probably bad wall art but also other random things you aren't even shopping for

You can sell a ton of different styles of that one product
But you also want to raise you AOV.
When niched down you can bundle your items together or make them into a collection.
For example:

Bundle of 3 - $35

Having a niche helps you focus and prioritize what's most important in your shop
Think about all the extra work is involved when you have a variety of products.
When you are in a niche you can focus in and ultimately have better listings

Even in the long run, if you were wanting to scale your shop into becoming a known brand then niching down is really important

all their wants, needs, and desires leading you to create products they will purchase

The end goal is to become a well known brand on Etsy and you can't do that by selling to multiple niches
