I don't necessarily think we need to bring in someone similar but better to Sissoko(i.e. a direct upgrade), I'd rather we go for a different profile, but here are some players I think can do the things Sissoko does: retain possession, press, tackle, win tackles, physical
I used football slices for all visualisations. I'd add Mwepu to the list too even though he's much more offensive:
Cheick Doucoure: Really liked him in L2 last season. If we want Sissoko but better he's lab built for the role. He can fill in at CB, and he's a good passer

Zakaria: Highest profile name on the list. Has played as a CB and in a B2B role, contract is running out in 18 months
Soumare: Not quite similar to Sissoko, but much better on the ball and contract is running out.
Khepren Thuram: Another son of Lilian(we should buy Marcus!)

He's really young which is nice
There's also Tyler Adams who is worth considering, Bissouma(too many turnovers though), Sanches/Sabitzer- very different profile but a creative option on the right

I also like Cubas, but he's not physical enough.
I sense all Mou wants is someone powerful, who is disciplined to track any runners and doesn't lose the ball. So we should be looking for someone who can do this but is technically good
