Digital Foundry isn't saying the PS5 is equivalent to a 2080 Super or 3060 Ti, they're saying that it would take, on Nvidia Hardware for a game like AC Valhalla, which is clearly better better optimized on AMD GPUs, to match or exceed PS5. Don't forget the exceed part.
Pay attention to the performance advantage of the 2080 Ti, then consider that DF also points out that the 5700XT would get you very close to, or within striking distance of the PS5's performance. PS5 is in the performance range of 5700XT in a clearly AMD favored title.
It actually shows you perfectly just how much Series X isn't meeting the performance potential of its spec right now. Series X's GPU is beyond the 2080 Super in every facet minus raw ray tracing grunt and AI learning acceleration.
Series X has 2080 Super beat in TFLOPs 12 to 11.15, 52 Compute Units for Series X (48 SMs for Nvidia, as that's what Nvidia calls them) Series X has 560GB/s to 2080 Super's 495GB/s. Based on 5700XT performance, Series X GPU certainly beats or matches 2080 Super at minimum.
