Maybe the reason people like deeper themes when in games like No More Heroes or Persona 3 and they don't like them in certain Triple A titles is due to how said themes are conveyed/handled in the story writing and it has never to do with people not liking deep narratives
No More Heroes tackles the weight of murder and the fetishization of death in media but it's done through fun engaging characters and a unique setting
Persona 3 is about the existential dread many face with death and teaches the player to cherish life while also doing so in a fun RPG that has an engaging base narrative

Alot of games that focus on their deeper message like whatever 100th Walking Simulator on Steam tend to lack anything that brings players in on a surface layer
Casuals don't go into Persona 3 looking for a narrative about living with the eventuality of death but that's why it hits better when that message starts coming out

Nier Automata, Metal Gear Solid, Final Fantasy VII, and so many others have plots that just happen to send a message you can take into reality and learn from.
