Cause we need to get out in front of this - after Covid collapses every small business and all the dirt cheap assets hit the market someone is going to see food service is ripe for uberification
Just extend the franchise model for fast food to its logical conclusion so all operators of food service places are independent contractors given a bakery in a box or something - that or everything becomes a dark kitchen which makes it easier to track back of house workers
we can attack this from a lot of angles but we could also cut out the middleman and create city cafeteria and automats in each zip code to provide actual competition to this coming super monopoly. Let’s use those same forces of vertical integration and economy of scale for good.
Again, we decide what makes money and what does not via subsidies and the like
