What if I told you that you could turn your leftover candied yams into biscuits?
Use the sweet potato biscuit recipe in my holiday ebook or blog. Sub mashed sweet potato for candied yams. Depending on how sweet they already are, you shouldn’t need the additional sugar in the recipe!
After you mix the dry ingredients (flour/baking powder/soda/salt) you can cut in the butter as usual.
Then add your puréed sweet potato mix. This time it’s just the candied yams, eggs, buttermilk.
After you mix in the sweet potato, you might need a little extra buttermilk. Don’t add too much. When you dump the dough out onto the counter it’s gonna feel a little crumbly at first. Don’t overwork, but these are for sandwiches so they aren’t as delicate as my regular recipe.
I’m doing square biscuits, a little less scraps that way. Using my dough scraper to turn the dough over on itself a couple times and then pat it out into a rectangle.
I only cut the very outside edge off, just to expose the layers a bit when they rise. Completely optional.
