Israel's laws & policies have been described as, & deemed to be, a form of apartheid for decades, by scholars, rights experts, & activists. Here is a selection of sources from just the last few years - beginning with those who experience Israeli apartheid directly: Palestinians.
Dozens of Palestinian civil society orgs - human rights NGOs, trade unions, cultural centres etc. - were signatories to this July 2020 open letter urging accountability for an "apartheid regime of racial discrimination, segregation & territorial expansion" https://www.alhaq.org/advocacy/17049.html

How about Israeli groups?

In 2012, the UN Committee on the Elimination of Racial Discrimination urged Israel "to take immediate measures to prohibit and eradicate any such policies or practices [of racial segregation and apartheid]".

In 2019, at its next periodic review, Israel was again urged by the Committee to heed "the prevention, prohibition & eradication of all policies and practices of racial segregation and apartheid".

Finally, there is the detailed 2017 report commissioned & published by the UN Economic and Social Commission for Western Asia (ESCWA) which found Israel had established "an apartheid regime that oppresses and dominates the Palestinian people as a whole".
