Disclaimer: these are my personal opinions and not at all reflective of the VA or translator's skill! It's very difficult to translate the nuances, and a lot has been 'localized'--i.e. entirely changed to suit different audiences. They actually did pretty well, IMO.
An example of localization in Genshin:
CN Kaeya: "(Haven't we) been sitting around for long enough? If we don't move our bodies, we're gonna grow mushrooms!"
EN achieves the same joking tone, but you can see how the actual wording differs!

anyway, speaking of Kaeya...
EN: Snarky, outright rude and mean, kind of overdramatic... I actually didn't like him at first lol
CN: Still snarky but much, MUCH more charming and playful, and I want to marry this man now

A good example is his Burst voiceline-
EN: "This moment will be frozen in time!"
CN: "小心着凉!" (Be careful, you'll catch a cold!)
CN comes across as cheeky (you can practically hear the ;D) , while the EN feels too serious because the neat cadence in CN is lost in EN.

Another victim of lost cadence: Xingqiu!
The translation is pretty much spot on, but the way the CN is structured and spoken comes across much more 'purehearted' and factual, whilst the EN sounds a little... dismissive? or condescending of his brother.

Xingqiu speaks in formal/flowery language. This can sound pretentious and "Fischl-like" in EN, but is very respectable and impressive in CN. It really shows his "young master" status! His CN lines also feel shorter; flowery language in CN is VERY concise, the reverse of EN.
You have to be highly educated and well-read to speak like CN Xingqiu, as well as smart enough to condense everything you want to say into so few words but have it still make perfect sense AND convey tone. This gives him a lot of personality in the CN dub!
