Black pepper (Piper nigrum) is native to India. You confused pepper with Chillies (Capsicum)

Tomatoes & Potatoes were not main ingredients rather supplementary.

All Basic food was same. Like Rotis and Chapatis: रोटिका and चर्पटी of wheat and millets. Besides basic Roti & Chapatis other breads like Mandakas, Polikas, Angarkartikas were eaten

Various kinds of sweetmeats or sweet cakes of wheat अपूप were known
Rice dishes like:
Paramanna: Rice with Milk
Gudodana: Rice with Jaggery
Mudgodana: Rice with Mung bean (today called Khichdi)
Haridranna: Rice with Turmeric
Krsarodana: Rice with Sesame
Mamsodana: Rice with meat (Biryani)
Pulaka: Rice with spices (Pulao)
Dosa and Idlis were there
Lentils like Māsh and Mung were common and used to prepare Dals or lentil soups.

Today we eat Vadas and that were onown as Vatakas. Pakoras were called Pakvavatva. Papada were called Parpata.
Sweets like: laddu/Modaka, Ghevara, Pheni, Chhena/Cheese recipes: Rasgulla, Gulab Jamun, Rasmalai, Shrikhand, Jalvallika (Jalebi), Khoa recipes, Kalakand/Khurchan were all there
Much of the Basic ingredients: Cereals (wheat, rice, millets ), Pulses and legumes (Mash ans Mung), Dry fruits, spices and condiments, cooking oils (ghee and mustard, sesame, coconut) were always there.
Drinks both alcoholic and non alcoholic were also prepared. Sharbats were known as Panaks. Like Nimbu Panaka (Lemonade), Tamarind Panaka, Jaggery Panaka, Juices of Date palms and other fruits were consumed
Indian Cuisine is so rich and full of varieties that I have missed many of the dishes. This is just tip of an iceberg.
Indians too have forgotten many ancient recipes. Need of the hour is to preserve and cherish what we have at present and stop cultural misappropriation
