Apple has been really quite frustrated with Intel's inability to improve in notable ways. If Apple were to remain with Intel they'd be stuck with incredibly power-hungry processors that generate more heat than what Apple wants for a good consumer experience.

This is why Apple can announce DRAMATIC improvements in power per watt leading to significant battery improvements, and the ability for passive cooling (fanless) so your computer doesn't sound like it's going to take off (like they do now) in the MacBook Air
