Most of my tweets about restaurants are total misery porn, sorry. But did you know pizza is totally KILLING it right now? Because kids dictate literally everything in life these days. https://marker.medium.com/the-death-of-the-15-salad-96f920ec4dfd
Here's a photo of a pizza my husband made. The margherita costs $1.14 to make but this one is probably more like $1.47 because charcuterie. When food costs are 5% of ticket price, you can afford to pay protection money to delivery apps & evil franchisors & still pay the rent—yay!
Pizza is SO HOT right now that people have even started ordering from PIZZA HUT of all places. Here's the biggest PHUT franchisee admitting in a bankruptcy filing that its 2020 Pizza Hut EBITDA was unexpectedly 8 TIMES its forecast. (They're bankrupt anyway, bc private equity.)
(Incidentally, private equity is also the culprit behind this year's bankruptcy of California Pizza Kitchen & Chuck E Cheese.)
Private equity has
pizza ever since Bain cashed $2 billion out of Domino's during the early 2000s. Bain got so greedy Domino's couldn't even afford respectable cheese or tomatoes, which as I've established, are both EXTREMELY CHEAP THINGS

During the last recession Domino's was a three dollar stock. It's now a $400 stock! Their success has been attributed to their transformation into a "tech company" but what really happened is they fired Bain's chosen CEO and made their pizza less bad.
Don't cry for deposed Domino's CEO David Brandon; Bain found him a new gig overseeing its raid on Toys R Us https://www.usatoday.com/story/money/2018/03/15/david-brandon-toys-r-us/427347002/
But the success of Domino's inspired motion a Silicon Valley "Food Tech" bubble that lives with us today. Softbank's Zume Pizza burned $400 million developing pizza robots that made mediocre pizzas veeerrry slowwwly https://www.bloomberg.com/news/articles/2020-02-13/inside-the-firings-at-softbank-s-robot-pizza-startup?sref=ZvMMMOkz
Then of course there's Sweetgreen. I LOVE Sweetgreen, because I run a CSA and purchase & prep an ungodly quantity of vegetables every week & trust me making veggies delicious is A LOT OF WORK (that your children will never appreciate) https://www.inc.com/magazine/201905/burt-helm/sweetgreen-salad-chain-brand-strategy-ipo-tech-pivot.html
That said, I think Sweetgreen is a $ pit & the strong WeWork vibes, insane turnover & blowjobby appearance on "I Built This" (which seriously, is there a less inquisitive interviewer than the "I Built This" guy?) are not the only similarities between them https://www.npr.org/2020/04/10/831678631/sweetgreen-nicolas-jammet-and-jonathan-neman
Anyway in conclusion, if you're in the restaurant biz, buy a pizza oven! The guys at Forza Forni gave my husband HOURS of advice & he didn't even buy an oven from them! (Long story.) And hire "Dough Doctor" Tom Lehmann, Roberto Caporuscio or Anthony Falco to help your dough game
