I had a bunch of the capping wax left over from harvesting honey, and there was quite a bit of honey locked up in it. I tried an experiment with a batch by heating it slowly in the oven and letting it sit overnight to see if the wax and honey would separate cleanly. They did...
But I think I went a little too warm a little too long, and just ever so slightly caramelized the honey. It is much darker than it was.
So, naturally, I tried making a honey rye old fashioned with it.
And long story short, very slightly caramelized honey makes an AMAZING old fashioned.
