There's staff comments about the concept behind the group key art.

Seems like my hc about Barret's gun wasn't too far off. He has a power motor in it and can disemble the gun himself. Maybe he does actually carry a tool kit with him 
Tifa's green dress from the costume page. The comment speaks of creating a girlish silhouette and when they found the fabric too thin, made adjustments to the design.
This is a really beautiful picture. The comment is that even though Aerith and ilfana had a tough time living in the Shinra building, the team wanted to convey their close relationship and how they still had fun together.
Brian Lockhart. The comment just repeats that they called him "dead body" during concept for part one, but maybe it's time they start calling him "Tifa's papa".
This concept art for sector 7 is how the team envisioned the area. The comment echoes the portal interview from Toriyama that the bgm is the main theme to evoke a sense of coming home.
7th Heaven is designed in a western style, like Tifa's teenage costume, but the team couldn't include swing doors because of the need to hide Avalanche's activities from the public.

The church in S5 was built because the people who lost loved ones in the S6 plate collapse needed somewhere to mourn.

Originally the flower choices were red, white and yellow and the cactuar was a bomb.
The sewer level was originally a short section, but the team came up with a lot of fun ideas to expand it to a full level. The girls also get their moment to develop their relationship and showcase their growing friendship.
The Abzu battle was given a lot of thought to show the different ways the environment could be used. In the end the team went with utilising the waterways in the fight.
The ghost graffiti was originally more colourful, bit the team did think it looked scary enough, so they made it monochromatic. It's supposedly drawn by one of the ghost kids.

The top picture is a light bulb that apparently lasts 20yrs,so if you change it 5 times you've lived a long life. The bottom picture is a novel about a man riding an airship in search of friends. It's a popular book in Midgar.
Toriyama says he gave Cloud's twin stinger a cool name because it'll appear in future related works...
I know people have seen Tifa's quest, but there's a 4th page that details the elements of her dress sidequest. One for her canon outfit is taking a photo of Marlene. It was obvious from the camera next to the lily in 7th heaven, but she's the photographer, not Cloud.
Okay, so the quest for Tifa is massive with a lot of detail and even includes timeline info, so I'm just gonna add a rough summation of it all.

Midgar City is only 31 years old at the start of the story and few people lived there before that. Most came to help with construction, so it became a melting pot of ethnicities like modern New York.
These are from the planning pages and detail a lot of world building information that isn't expressly stated in the game.
The red line is the path the golden trio took to mako reactor 5 and the damage it caused. Red areas are fires, green are power outages. The little yellow chocobo head is where Cloud fell and the trio of smiley faces are the people in S5 "rubber necking" from the train station
In the OG, Aerith got dressed after Cloud. In the storyboards for Remake we see Aerith enter the honeybee inn in her regular clothes. Just think, we missed out on a hilarious dress reveal scene with both Cloud and Aerith dolled up at the same time
