Star Wars isn't one solid product; it's a series of products in one universe. It's like a specialty pie shop; all the same type of thing, but in many flavors and styles. A big fallacy I see often is people saying that "x is SW." 1/
No one thing encompasses what EVERYONE likes about SW, but the banner is that you like it. People saying that Mando "is Star Wars now" is...fine, but the caveat must always be "to you."
Let's talk about pie again: not everyone likes every type of pie, because there are a lot.
You might like savory or sweet, fruit or custard, but you'll probably have preferences and favorites. That's okay! Thankfully the restaurant makes all these pies.
Or it used to.
Now it's making really good apple pies. But you don't like the crust.
Still, you try their apple pie.
It's good! It's the best apple pie you ever had. But you just still don't like apple pie, and you're probably never going to ask for it again.
But they've stopped making the pecan pie you love so much. And you ask for it, but they keep telling you to enjoy the apple pie.
People love the cherry pie! And they love the apple pie! So they change the pecan pie to be more like the apple and cherry pies so what you like is no longer there. They make more pies to fit this change.
When you say the recipe is changed, they tell you enjoy the apple.
The Mandalorian is my apple pie.

It's good at what it is, but it's not what I want from SW. It's not what got me into the saga, and it never will be.

There are other parts of SW out there that might give me what I want from the world, but it seems like what I want isn't there.
Good for people who like Mando, but the character stories, magic, and themes of hope and redemption and love are my favorite parts of this space fantasy. You get glimpses of this in Mando, but it's layered under a lot of stuff that doesn't interest me. But "that's Star Wars now"
Mando is a tropey Western. That's fine. But the season premiere reminded me that I just don't like Westerns. I don't care about bounty hunters that much, but the one thing that really intrigues me is the lore of the Mandalorians. It's just buried and stretched thin. I need more!
Mando is fine. The premiere was fine. It's just not for me.
Alaskan bull worm hunt was fun but it was an RPG on TV. It's whatever.
