1- use big potatoes. Cut into not too thin slices.
2- wash under running water
3- dry properly
4- bring oil to temperature (160-170°C)
5- Deep fry until you see a light crust
6- Take them out, salt
7- bring the oil back to temperature (180/190°C)
8- fry until golden, salt

Do not fall for the "seed oil" meme that says that it allegedly works better for frying.
